Rich potato soup with dried mint and rose harissa
4-5 onions, sliced
3 garlic cloves, sliced
1-2 tsp of dried mint
1 tsp of dried sweet paprika powder
1 tsp of cumin
1/2 tsp of curcuma
3-4 medium sized Mediterranean potatoes, peeled, in pieces
1 l of water or chicken broth
handful of wild spinach
labneh or thick yoghurt
rose harissa
pul biber, aleppo pepper or other pepper flakes
Fry the onions soft with half of the garlic add the dried mint, sweet paprika, cumin some turmeric and potato. Add enough water or chicken broth. Season with salt. Cook until soft and purée. Fry a handful of wild spinach with garlic. Throw in. Add a dollop of labneh and generous lick of rose harissa and some pepper flakes. Finish with olive oil and eat! yalla
