The most fantastic cauliflower salad

This salad is my current obsession, i love it so much. Its deep fried and a salad! Yes that is possible….

I got inspired by the way Lebanese fry their cauliflower arnabeet with tarator sauce on the side and it ended up in my book Beiroet. I added some labneh, a coriander herb oil and fried pine nuts and garlic. Now this is the more comforty version of that same recipe: i just kind a shovelled the deep fried cauliflower with the spicy yoghurt so it was coated on all sides. So so easy and the best for a party or a big dinner as I can mise en place the whole thing just before. Yalla lets do this.


1/2 l of frying oil (sunflower)
5 cloves of garlic
handful of pine nuts
1 big head of cauliflower
1 bunch of parsley
200 g of Greek yoghurt or sheeps yoghurt
ground cumin
ground paprika
olive oil

Heat the oil. Chop the garlic lengthwise and fry golden. Fry the pine nuts golden as well. Cut loose the florets of the cauliflower. Fry them in batches until golden and soft. Leave to drain and sprinkle with salt. Chop the parsley. Mix the yoghurt with some cumin and paprika powder and salt to taste. Mix with the fried cauliflower and sprinkle with everything: the garlic, the pine nuts and parsley and olive oil.
