Roasted cauliflower skewers with labneh and coriander mint oil
I wanted to create something really satisfying on the bbq without meat for the bajes beach club and so I thought about cauliflower! I just pretended it was meat. I marinated and roasted them and that made all the difference. I think it became much better than that! The labneh and herb oil on top really seals the deal. I think it became a veg skewer for people who eat meat:-)
1 head of cauliflower
salt
olive oil
2-3 tbsp of cumin
2-3 tbsp of paprikapowder
1 bunch of mint
3 tbsp of coriander seed crushed
lemon zest
1 garlic clove
labneh
sumac
Divide cauliflower in florets. Mix with the spices, olive oil and salt rub generously with your hands until well rubbed in. Leave to marinate while you do the rest.
Puree (with handheld mixer or small kitchen machine) mint, coriander seeds, lemon zest, garlic and olive oil until you’ ve got a nice green oil, add some salt.
Make skewers of the florets. Stir some labneh or thick yoghurt with some sumac.
Gril the skewers on a bbq or under the grill of your oven until golden and soft. Drizzle with both the labneh and the green oil. Serve straight away
