Whole roasted zucchini with orange tarator

 

whole zucchini from the bbq served with tahini, almond and parsley orange oil 
We served this at the bajes beach club as a main, with fries and a nice fattoush! So many flavours and yet so simple…..

serves 4 

 

200 ml tahina of good quality
salt
100 g of almonds
1 bunch of parsley
zest of one orange
1/2 garlic clove
4 beautiful zucchini (courgette)
sumac

Stir tahini with orange juice, water and salt. Should be a nice runny sauce. If it thickens too much I always add just a bit more water (and more salt). 

Fry almonds golden and chop up

Mix with handheld mixer the parsley with the orange zest, garlic, olive oil and add salt to taste. 

Grill the zucchini on bbq or under oven grill until charred and soft. Drizzle generously with the tahini sauce and sprinkle with the almonds and some sumac
