fabulous seed crackers with aniseed

I created those for delicious. magazine and they became a household favorite. So ridiculously easy and so cracking yummy! Scoop up any labneh, any dip with it……

200 g farina di grano duro
50 g semolina
50 g sesame seeds
25 g nigella seeds
50 g sunflower seeds, finely chopped
fleur de sel
2 tsp aniseed
1/2 tsp baking powder
2-3 tbsp olive oil
300-320 ml of water

Mix the flour, semolina, sesame seeds, sunflower seeds, some fleur de sel, aniseed, baking powder in a bowl and add the olive oil and the water. Knead well into a smooth dough. Place a piece of parchment paper in front of you, sprinkle with some semolina and place 1/3 piece of dough on top. Roll out as thin as possible. Or thicker if you like that better! Always follow your own preferences as you are eating it later on. Sprinkle with some more fleur de sel and roll over again. Heat the oven to 200C and bake the crackers lightly golden brown in 10-15 min. Let it cool and break into nice pieces.
